Ingredients

  • 1 cup flour
  • 1/2 cup butter, almost room temperature
  • 1/4 cup powdered sugar, plus some for sprinkling after
  • 2 eggs, lightly beaten
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • dash of salt
  • 2 1/2 tablespoons lemon juice, fresh
  • zest of one lemon

This recipe is from Peanuts Cookbook published by Scholastic Books in 1970.

Instructions

  • Sift flour and sugar into a bowl. Blend in butter with clean fingertips until well mixed.

  • Pat evenly into the bottom of an 8" x 8" baking pan. Bake for 20 minutes at 350°

  • Meanwhile beat together eggs, sugar, baking powder,lemon juice, dash of salt

  • Pour over baked crust and return to the oven for 20-25 minutes at same temperature.

  • Cool on rack. Cut into squares. Sprinkle with sifted, powdered sugar.
