Honey Roasted Carrots

Ingredients
- 1 kg. baby carrots, peeled
- 500 g. baby golden beets, peeled, halved
- 2 tsp. thyme
- salt
- pepper
- 2 tbsp honey
- 2 tbsp white wine
Instructions
- Preheat the oven to 350°F (175°C).
- Toss the carrots and beets with olive oil, thyme and salt and pepper. Roast for 20 minutes.
- Stir carrots and beets, drizzle with honey and white wine. Roast for an additional 20 minutes.
