Cranberry Onion Relish

Ingredients

  • 1 cup sugar
  • 1/2 cup water
  • 1/2 cup orange juice
  • 4 cups cranberries
  • 1/4 cup red wine vinegar
  • 1/2 cup yellow onion, brunoise

Recipe Notes

Try adding mayo to the relish as a delicious spread on your next day turkey sandwiches!

Instructions

  • In a small sauce pot, sauté onions in grapeseed oil until translucent in colour

  • Add 1/4 cup sugar and cook until golden brown caramel colour and add red wine vinegar and allow sugar to dissolve. (Be careful as this causes a lot of steam!)

  • Add remaining sugar, cranberries, water and orange juice and cook for 10 minutes, stirring occasionally

  • Allow the mixture to thicken on medium heat, reducing by 1/3. Add salt to taste.

  • Allow to cool before serving.
